Modified Vegan Corn Chowder at Tiffins in Disney’s Animal Kingdom
Order the Modified Vegan Corn Chowder. You must specify vegan as the regular chowder here is made with dairy.
This is a scratch made dish so it may not be feasible for the chefs to make it if the restaurant and kitchen are super busy.
That being said, this chowder starts out with Brentwood sweet corn. The kernels are cut off the cobs and are cooked to make corn stock.
Aromatic vegetables are added to the stock and instead of cream, the chefs use tapioca starch to thicken it.
More corn is grilled and added to the chowder along with pickled jalapeños, crispy leeks and chive oil.
You’ll also need to skip the candied bacon garnish on this dish.
