Peruvian Salad Added to EPCOT’s Connections Eatery

There have been quite a few changes to menus across Walt Disney World parks and resorts, and the plant-based vegan options have not been safe from these changes – including Connections eatery in EPCOT – which switched up the Niçoise salad to a new Peruvian salad. We tried it out and wanted to share our review with you below.

Previously, the vegan salad option at Connections was the Niçoise-style Salad, which was packed with potatoes, white and green beans, and olives drizzled with a delicious Dijon vinaigrette. Since opening, the original vegan curry-style pizza was changed and a Black Bean Burger is the main vegan option now. Now, the Niçoise salad has been removed and the Peruvian salad has taken its place. The General Tso salad is still available and modifiable to vegan if you remove the chicken and switch the dressing to the vegan option. But let’s get to the new vegan Peruvian salad option!

Peruvian Salad Review EPCOT Connections Eatery

The Peruvian Salad is described as: Field Greens, Sweet Potatoes, Avocado, Chuclo, Onions, Sweety Drop Peppers, Canchita, Spiced Sesame Vinaigrette. This is a truly unique and interesting salad with some great flavors and textures.

As you can see there are big pieces of sweet potato, and fresh avocado, along with the delicious sweety drops peppers. Added to that are giant pieces of corn or chuclo, a Peruvian type of corn. Then added to that is Canchita, or corn nuts. The sesame vinagrette is the perfect dressing to tie all the flavors and textures together, not too overpowering.

I think this is a wonderful addition, and if you aren’t feeling the vegan Black Bean Burger (which is also delicious) or just want something lighter on a super hot EPCOT day, this is a nice option for us. Let me know if you give it a try and what you think! Thanks for reading and following along!
