Jaleo Vegan Catalan Bean Salad in Disney Springs at Walt Disney World
Jaleo, which translates to “a lively Spanish dance or the music or handclapping that accompanies it” can be found on the West Side.
This dish is called Empadrat De Mongetes and it’s a traditional Catalan Bean Salad with diced tomatoes, black olives, red onion and a sherry dressing.
The dish is drizzled with more black olive purée and then garnished with micro greens.
It’s such a simple dish, but sometimes simple is best.
