Disney just announced a new restaurant coming to Disney Springs and it is being billed as a neighborhood coffeehouse highlighting healthy comfort dishes with both vegetarian and vegan options.

What’s Vegan at Beatrix in Disney Springs at Walt Disney World

The restaurant is Beatrix and it is based out of Chicago. Beatrix is a casual eatery serving up vibrant dishes, coffee, pastries, fresh-squeezed juices, craft cocktails, and an all-American beer and wine selection. The restaurant will be a welcome addition to the ever growing offerings in Disney Springs at the Walt Disney World Resort.

The menu for Beatrix hasn’t been released yet, but we here at Vegan Disney Food did a little digging and uncovered a few options we might see on the new restaurant menu and expect to be vegan.

Beatrix Disney Springs Fresh Squeezed Juices

The fresh squeezed juice menu is likely to have the following:

  • Cucumber and Mint Soda
  • Power Greens with kale, romaine, celery, pineapple & mint
  • Activated Charcoal Lemonade
  • Pineapple, Pear and Ginger
  • Mango, Orange and Pineapple Nectar
  • Blueberry and Basil Smash
  • Celery Caraway Cooler
  • Sweet Valencia Orange
  • Blue Boost with pure blueberry juice, white grape & basil

Beatrix Disney Springs Vegan Breakfast Options

The Beatrix Chicago locations serve both breakfast and brunch so we might see some of these dishes being offered:

  • Ten Grain Oatmeal with dried cherries, dark brown sugar & toasted almonds
  • Chia Cereal Bowl with puffed brown rice, toasted coconut, banana & organic peach compote
  • Avocado Toast
  • Hash Browns
  • Sliced Tomato and Avocado
  • Melon and Berries
  • Whole Grain Toast

Beatrix Disney Springs Vegan Snacks

Vegan snacks at Beatrix are likely to include:

  • Kennebec Fries with crispy lemons & chilis (no mayo)
  • Hummus with vegetables (substitute naan with sourdough)
  • Kung Pao Brussel Sprouts
  • Roasted Beets (no feta)

Beatrix Disney Springs Vegan Entrees

We might see a couple of these vegan entrees gracing the Beatrix menu:

  • Tomato Gazpacho with six vegetable garni
  • Straight “A” Salad with arugula, avocado, asian pear & almonds (no Asiago)
  • Roasted Cauliflower Salad with arugula, romaine & kale, prairie toasted pistachios, currants & pistachio vinaigrette (no cheddar)
  • Supernatural Chopped Salad with spinach, romaine, baby greens, celery, cucumbers, tomatoes, green beans, peaches, dried corn, sunflower & pumpkin seeds, migas, basil & market vinaigrette (no parmesan)
  • Crispy Quinoa and Avocado Tacos with pico de gallo, black beans, jicama, cabbage slaw & salsa roja
  • Mushroom and Quinoa Burger (no swiss cheese) with baby kale and kennebec fries (no sriracha aioli)
  • Vegan Asparagus and Pea Farrotto with sugar snap peas, roasted leeks, marsala broth & truffle oil
  • Vegan Eggplant Steak with toasted garlic breadcrumbs and tomato-basil

Beatrix Disney Springs Vegan Desserts

And last but certainly not least are a few sweets we can expect to see on the Beatrix dessert menu:

  • Chia Pudding with chia seeds, coconut milk and diced mango
  • Vegan Cookies

We can only speculate at this time if any of these offerings will be fully vegan and available once Beatrix officially opens in Disney Springs. We will be sure to update this list as soon as the official menu has been published and will inform you of the restaurant’s opening date as soon as that information becomes available.
