Well, we barely got time to enjoy multiple visits for the vegan flatbread at Pecos Bill Tall Tale Inn and Cafe here at VDF (we also shared our vegan flat bread at Pecos Bill review video on our YouTube channel and reel on social) before it has now been updated yet again! I’m not sure why, because I feel like the reviews and feedback for the vegan flatbread were very positive, but we now have a rice bowl with Impossible meatballs added. I do wonder if this has changed due to the ease of keeping Impossible meatballs in the freezer and using them as needed, allowing for easy storage if there aren’t as many plant-based eaters ordering that item vs. the meat options. But that may just be me overthinking. The Mine Car Meatballs at Jock Lindsey’s Hangar Bar have been a great success I believe, so maybe that contributed to the change as well. If you know the reason for the change, feel free to spill the vegan tea! 😉
My friend Devon actually texted me with this update asking if it was old news. It definitely wasn’t to me, but I have been on a mini hiatus due to my day job filling my hours and forcing me to simmer VDF on the backburner for a bit. More on that later!
I have now tried the new vegan rice bowl with Impossible meatballs at Pecos Bill, so here are some more photos and my review:
It is described as — Plant-based Rice Bowl with Impossible Meatballs, Red Chile Tomato Sauce, Pinto Beans, Cilantro-lime Rice, Cowboy Caviar, and Lime Crema. So basically the same toppings as the flatbread, without the corn masa bread. And the rice from the previously available rice bowl, which you CAN still order by itself without the meatballs and removing the queso fresco, but you will have to order it in person as the mobile order option on the app once again requires you to select a protein.
Vegan Review: Plant-based Rice Bowl with Impossible Meatballs
While I will definitely miss the unique and sharable nature of the flatbread, I DO enjoy this update. Rather than just plopping some previously frozen meatballs on the rice, it does appear that the Pecos Bill team has simmered the meatballs in the tomato sauce. As a result, they have a very plump, juicy texture to them and you can taste the flavors of the sauce in every bite.
Speaking of textures, the combination of the corn and pico in the cowboy caviar, the pinto beans, and the rice, along with the crema, really packs a satisfying punch. If they threw some fritos on top, it would be an even more magical option. Overall, the mix of ingredients in this bowl are packed with tex mex goodness and if you enjoy those piquant flavors, you will like this filling lunch or dinner option. I would get it again, and I’m glad we are able to order it without the meatballs for those that don’t partake in plant-based meats.

I may be trying this soon and I’ll update the post, but I’d imagine these are the pre-made Impossible meatballs like Jock Lindsey uses rather than house-made from ground Impossible, but maybe I’ll be surprised! See above! I already enjoyed the rest of the toppings and base from trying the previous vegan rice bowl and the vegan flatbread, so if you enjoy those flavors also, this may be a great option.
