This is the Modified Crispy Yuca Vegetable Bowl which is available for both lunch and dinner.
Crispy fried squares of yuca are covered with black beans and pico de gallo and garnished with a lime wedge. Chef added pickled onions and vegan slaw to mine as well. Don’t skip these add-in’s. They’re essential!
Omit the Cotija cheese to make it vegan.
Spyglass Grill is the outdoor pool bar eatery in the resort’s Trinidad section. The restaurant has vegan black bean tacos as well as salads.
Seating is limited on the outdoor patio and there is no indoor air conditioned option when dining here.
