There are several places across WDW to get sushi. If you’re looking for vegan options you can find them in Kimonos at the Walt Disney World Swan Resort.

Order the Vegetarian Summer Roll.
Fresh veggies are wrapped in rice paper and served sushi style. This roll is rice free. I always skip the Ponzu Sauce with this dish since it is traditionally made using tuna flakes.
There’s also a wonderful little Seasonal Green Salad on the menu that’s vegan friendly as well as their Ichiban Roll and you can create your own sushi roll with things like cucumber, avocado and asparagus.
The restaurant is a fairly small space and is only open for dinner. It has more of a lounge feel to it. Low tables and couches take up the center of the room while full height dining tables line the perimeter. There’s also seating at the full service bar and the menu is available there as well.
