Ok, so this isn’t a Vegan DISNEY Food recipe, but I recently experimented and discovered what I think is a great recipe for Vegan Peanut Butter Chocolate Banana Bread. I love to bake when I have the time, and I’m always trying to find GOOD recipes online, and sometimes they are disappointments, but this time around, I added my own extras to a vegan banana bread recipe and it came our pretty great. Unlike many veganized recipes, there’s no added sugar and not even any egg replacement like apple sauce, it just all comes together and works, easy peasy.
I shared it on my VeganDisneyFood instagram account and asked if anyone wanted the recipe. The response was pretty overwhelmingly yes, so I figured this was the easiest way to make this vegan banana bread recipe accessible and savable for everyone to enjoy.
I will say it is not as sweet as normal banana bread. This is due not only to no added sugar (just maple) and the oats and flax meal added in. I loved that it tastes like a warm handheld version of overnight oats. So feel free to experiment on your own if you’d like it a bit sweeter. I think if I made it again I’d use less chocolate and add one more banana. But I loved the crunch of the pecans and the subtle hint of peanut butter.

RECIPE: Vegan Peanut Butter Banana Chocolate Oatmeal Pecan Bread
This hearty bread would be great for breakfast or a snack, chock full of dark chocolate, pecans, peanut butter, and oats, it's like an overnight oats in bread form! No additional sugar added and 100% vegan.
Ingredients
- Non-stick cooking spray and/or parchment paper
- 3 medium-sized ripe bananas, mashed
- 1 Cup unsweetened almond milk
- 3/4 Cup pure maple syrup
- 4 Tablespoons melted vegan butter
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 1 1/2 Cups all-purpose or gluten-free flour
- 1 Cup oats (quick or old fashioned - I used old fashioned)
- 1/2 Cup creamy peanut butter
- 1/2 Cup vegan chocolate chips or vegan chocolate bar chopped up
- 1/2 Cup chopped pecans
- 2 Tablespoons flax meal
Instructions
- Preheat the over to 375 degrees Fahrenheit. Spray a 9x5 inch loaf pan with nonstick cooking spray (I also lined with parchment paper so it was easy to remove)
- In a large bowl, mash the bananas with a fork. Add in almond milk, maple syrup, melted vegan butter, vanilla, cinnamon, baking soda and baking powder. Mix until just combined.
- Add in flour, oats, peanut butter, pecans, and chocolate and mix until just combined again - don't over mix. Add in flax meal and stir one last time.
- Pour into prepared pan. You can lick the spoon because there's no eggs in here!
- Bake for 45-55 minutes depending on your oven and pan type. Test with a toothpick or knife and if it comes out without batter sticking to it, it's done. It should look golden brown on top.
- Let cool 10 minutes in pan and 10 minutes out of pan before cutting so it can all settle.
- Slice and enjoy! This is a very thick and hearty banana bread chock full of flavor and texture.
Notes
Feel free to add another banana, less chocolate, more peanut butter, or switch the nuts up or leave them out to your taste. If I made this again, I'd do less chocolate and one more banana and see how that worked out. But I still loved it as is above. I was worried adding so much would make it bake weird, but it worked out great!
It will keep 3-4 days wrapped up, enjoy room temperature or warmed up.
